With which activities do you lose track of time?
It was 18 years ago that I started the Camino de Santiago for the first time. More precisely, couple of days ago, 17 July, it was 18 years since I started this beautiful walk through the North of Spain. Exploring those beautiful Asturian and Galician landscapes filled me with enormous joy, as well as being able to enjoy them among friends while doing one of the best sports that can be done during our whole life. Walking longer or shorter. Walking faster or slower. But walking, always. Nowadays, there are applications that measure our daily steps and force us to set a goal, right? Well, this is one of the things in which I lose track of time. Few days ago, without going any further, I walked more than a normal day. For that very reason. It relaxes me. I enjoy it. And with anyone you meet, you smile at them, say hello, and they even joke with you if you’re wearing a Spanish National Team shirt on English soil 😝.

I first made a Spanish omelette 14 years ago. I was on an internship in Villafranca de los Barros, Badajoz, at AMUS -Acción por el Mundo Salvaje-, –Action for Wild World-, an association for the recovery of wild species, mostly birds. My mother had taught me the basic techniques to be able to make it, at the same time that I had learned how to make pasta (yes, it may be the simplest thing in the world but you are not born learned😅). Once I moved to England, my mother passed me the recipes for the most typical stews: lentils, chickpea stew and bean stew. And little by little, I started to unwrap myself in more recipes… Today, I can say that it is another of the things in which I can lose track of time, while I put on my headphones and listen to podcasts or music. Last week, precisely, was one of the ones I cooked the most: scrambled potatoes with egg and cod, salmon stew with beans and vegetables, salmorejo with crunchy Iberian ham and cheese ice cream. In addition to the traditional oat, almond and egg pancake that I eat for breakfast every day.
